Description

This delectable pasta dish featuring fresh cod in a creamy sauce is made heartier by the addition of poached eggs. A great option for a Fish Friday meal!

Ingredients

1 onions (small, finely chopped)
3 garlic cloves (minced)
2 sprigs parsley (chopped)
1 cod (pack frozen shredded)
1 can peeled tomatoes (diced)
250 grams macaroni
4 eggs
salt (to taste)
olive oil (to taste)

Directions

1Drizzle a frying pan with olive oil and saute the onion, garlic, and parsley over medium heat.
2Once it begins to brown, add the still-frozen cod, cover the pan, and cook for about 5 minutes.
3After five minutes, add the tomatoes and enough water to cook the pasta.
4Once boiling, add the macaroni and flavor with salt to taste.
5When the pasta is about halfway cooked (after 4 or 5 minutes), stir it well and then add the eggs to the boiling water to poach.
6Cover the pan and let it cook until the eggs are done.
7Serve immediately.
