This delectable pasta dish featuring fresh cod in a creamy sauce is made heartier by the addition of poached eggs. A great option for a Fish Friday meal!

Ingredients

  • 1 onion (small, finely chopped)
  • 3 garlic cloves (minced)
  • 2 sprigs parsley (chopped)
  • 1 cod (pack frozen shredded)
  • 1 can peeled tomatoes (diced)
  • 250 grams macaroni
  • 4 eggs
  • salt (to taste)
  • olive oil (to taste)

Directions

  1. Drizzle a frying pan with olive oil and saute the onion, garlic, and parsley over medium heat.
  2. Once it begins to brown, add the still-frozen cod, cover the pan, and cook for about 5 minutes.
  3. After five minutes, add the tomatoes and enough water to cook the pasta.
  4. Once boiling, add the macaroni and flavor with salt to taste.
  5. When the pasta is about halfway cooked (after 4 or 5 minutes), stir it well and then add the eggs to the boiling water to poach.
  6. Cover the pan and let it cook until the eggs are done.
  7. Serve immediately.

This recipe is so delicious and unique. Loved the creamy seafood pasta and the taste of the poached eggs just makes it even better. Love biting into the yoke of the egg with some pasta and cod. A great take on a seafood dinner dish that we often use on Fish Fridays.
