Ingredients

  • 4 ounces penne pasta
  • 8 ounces mixed seafood (cooked, chopped)
  • 1 red pepper (seeded, thinly sliced)
  • 1 mango (seeded, peeled, chopped)
  • 1 avocado (seeded, peeled, chopped)
  • 2 green onions (finely sliced)
  • 2 tablespoons chopped fresh herbs
  • dressing
  • 1/2 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 lime (juiced)

Directions

  1. Cook pasta in a large saucepan of boiling, salted water, following packet instructions. Rinse under cold water and drain well.
  2. To make the dressing stir all ingredients together in a small bowl. Season to taste.
  3. In a large salad bowl, combine the pasta with the remaining ingredients.
  4. Pour dressing over salad, toss well and keep chilled until ready to serve.
