This is a dish that is stunning and colorful for any main coarse. You can vary the quantities of seafood and also use crab or crayfish. The shrimp, squid and mussels add flavor to the creamy broth, while peppers, onions, and tomatoes add a savory taste to the dish

Ingredients

  • 400 grams langoustines (or small lobster or whole crawfish)
  • 200 grams jumbo shrimp
  • 200 grams medium shrimp
  • 250 grams squid
  • 6 mussels (cooked)
  • vegetable oil
  • 300 grams chicken (chunked)
  • 2 garlic cloves (diced)
  • 1 green bell pepper (chopped)
  • 1 red bell pepper (chopped)
  • 1 onion (chopped)
  • 1 tomato (peeled and grated)
  • 400 grams rice
  • saffron
  • water
  • salt

Directions

  1. In a large, wide skillet, saute the langoustines, jumbo shrimp, medium shrimp, squid, and mussels in a little oil. Remove from heat and set aside.
  2. Now saute all the chicken. Remove from heat and set aside also.
  3. Now add the garlic, bell peppers, and onion to the same skillet.
  4. After 5 minutes, add the tomato.
  5. Add the rice, saffron, and water and stir well.
  6. When this mixture begins to boil, stir back in the langoustine, shrimp, squid, and chicken. Salt to taste.
  7. Let the rice cook through and let sit a bit before serving. Decorate with the mussels.
