Description

You just might want to make this sauce a regular part of your rotation, since it would go great with all manner of fish and seafood besides the sea bass used here. To make it, unpeeled shrimp is first sauteed, then the peels and heads are crushed to extract as much flavor as possible and cooked along with some aromatics and tomato puree, and this mixture is then pureed, strained, and enriched with cream before serving over the fish.

Ingredients

  • 150 grams large shrimp
  • 1 bay leaf
  • 1 onions
  • 1 tablespoon tomato purée
  • 1 cup white wine
  • 1 teaspoon paprika
  • salt
  • pepper
  • 50 milliliters cream
  • 1 sea bass (cut into filets)

Directions

  1. Saute the shrimp and the bay leaf.
  2. Remove from the stove, peel the shrimp and set aside.
  3. Crush the heads and peels to get the flavor.
  4. Cook the onion in the same saucepan as the shrimp, add the tomato and the wine. Continue to cook, and blend along with the shrimp heads and peels, as well as the paprika.
  5. Blend thoroughly and strain to remove traces of the peels and heads.
  6. Season with salt and pepper. Add cream to taste.
  7. Pan sear the sea bass and serve with the sauce drizzled on top.
