  • 1 tablespoon olive oil
  • 1 onion (medium, chopped)
  • 2 cloves garlic (minced)
  • 1 red bell pepper (diced)
  • 1 pound firm tofu (drained)
  • 1/4 cup nutritional yeast
  • 1/2 lemon
  • 1 carrot (peeled and finely grated)
  • 1 bunch spinach (washed)
  • 2 teaspoons cumin
  • 1 teaspoon thyme
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric
  • 1 teaspoon sea salt

    Directions

    1. Chop the onion, pepper and garlic and add to heated oil in a large frying pan. Saute until translucent, then add the salt and spices.
    2. Drain the tofu and add to the spiced veggies. Break it into chunks with a wooden spoon.
    3. Add the carrot, and nutritional yeast and stir.
    4. Splash in the lemon juice and add the spinach. Stir until the spinach is wilted and serve hot!
