This egg dish is great for brunch, especially on Easter. Tender scrambled eggs are paired with smoked salmon and chives then served in delicate egg shells for a stunning and impressive presentation. While the preparation and filling of the egg shells is a bit of a task, it will be worth it in the end when you have a beautiful dish to present to your guests and family.

  • 2 slices smoked salmon
  • 1 tablespoon cream (liquid)
  • 1 tablespoon chive (finely chopped)

    Directions

    1. Cut the top of the eggs off with an egg slicer. Pour the eggs into a bowl. Gently clean the shells with clean water and let them dry.
    2. Cut the salmon slices in small strips.
    3. Add the cream and the chives to the eggs. Salt and pepper lightly. Whisk lightly with a fork and cook in double boiler while stirring with a spatula. When the mixture is almost cooked, add the smoked salmon, and mix.
    4. Pour the mixture into the shells. If there is mix left over, serve on sugar lettuce leaves.
