  • 1 tablespoon olive oil
  • 2 tablespoons onions (minced)
  • 1/2 chili peppers (guajillo, minced)
  • 1/3 cup tomatoes (minced)
  • 1/2 cup cabbage (minced)
  • 1 eggs
  • salt (as desired.)
  • tortillas (as desired)

Directions

  1. 1Heat the olive oil on a skillet on medium-low.
  2. 2Add the guajillo pepper and onion to the skillet, and cook them for 1 minute.
  3. 3Add the tomatoes and cabbage to the skillet. Let them cook for 3 minutes.
  4. 4Stir the egg and salt separately in a small cup and then add to the skillet.
  5. 5Cook the mixture for 3 to 5 minutes while stirring occasionally, and turn off the stove.
  6. 6Serve immediately over the tortillas.
