Ingredients

  • 1 tablespoon olive oil
  • 2 tablespoons onion (minced)
  • 1/2 chili pepper (guajillo, minced)
  • 1/3 cup tomato (minced)
  • 1/2 cup cabbage (minced)
  • 1 egg
  • salt (as desired.)
  • tortillas (as desired)

Directions

  1. Heat the olive oil on a skillet on medium-low.
  2. Add the guajillo pepper and onion to the skillet, and cook them for 1 minute.
  3. Add the tomatoes and cabbage to the skillet. Let them cook for 3 minutes.
  4. Stir the egg and salt separately in a small cup and then add to the skillet.
  5. Cook the mixture for 3 to 5 minutes while stirring occasionally, and turn off the stove.
  6. Serve immediately over the tortillas.

These eggs might sound a little different, but fresh shredded cabbage adds a crispness that tastes really good with the soft eggs. The dish costs barely anything to make. Chipotle peppers would be good on this for added heat.
