  • 1/2 teaspoon seasoned salt
  • 3 tablespoons onion (diced)
  • 1 cup cooked ham (diced, could also use cooked bacon or cooked sausage)
  • pepper (to taste)
  • 1/4 teaspoon garlic powder
  • 1/4 cup red bell pepper (diced)
  • 1/4 cup fresh mushrooms (diced, I sauteed mine first)
  • 1 cup shredded cheddar cheese (I use sharp)
  • 1/2 cup baby spinach (finely shredded)

    Absolutely fabulous!! I used a Colby-Jack cheese blend. I'll definitely be making again. They freeze great for quick breakfast at home or work. Simply reheat and you are all set!

    I made a version of scrambled egg muffins this evening they were awesome instead of milk I used my vanilla almond milk, green peppers, diced onions and diced tomatoes. When I took them out of the oven I sprinkled Kraft creamy melt Mexican 4 cheese which has a touch of Philadelphia cream cheese I just had one and the taste was fabulous. Thanks for the wonderful tip.

    Easy and delicious. Can make ahead and bake when you want it. I did not have mushrooms, but they tasted fine without it.

    this was delicious!! i didn't have mushrooms, red pepper, or seasoning salt (i used plain salt 1/4 tsp). I only had triple cheddar cheese. I used cooked bacon. i didn't quite follow the recipe, only because i woke up this morning thinking about egg muffins so i used the ingredients that i had.

    This recipe was super easy and delicious! I used everything listed on the recipe except for mushrooms and bacon instead of ham and they came out perfect!

    I enjoyed them. Fun to make & I'd make them again. They rose for me then imploded shortly after :) I chopped some mushrooms, and bacon bits instead of ham. Yummy!

    I did not use the meat, and instead of red bell pepper I used Hot peppers from my garden, Very good!! Use a non stick muffin tin cause the egg sticks a little.

    Very Tasty and extremely easy to prepare and make ...I had to modify muffins by using shredded mozzarella cheese with fresh chopped broccoli, dried onions and cherry tomatoes because that was all I could find.
