Very simple and reliable recipe, I generally substitute carrot or courgette for tomatoes and use cream cheese or coconut cream instead of sour cream. Also I would recomend adding more seasoning than the recipe states, such a pinch of turmeric or nutmeg depending on preference. These freeze well and are very good for breakfast.
