Baklava is a decadent and rich dessert made with philo dough and a nutty filling. This recipe for Savory “Baklava” with Carrots, Feta, Almonds and Mint takes that traditional treat to a whole new level. It takes 75 minutes to prepare four servings of the delicious treat.   • 1 kilogram carrots
  • 2 tablespoons olive oil
  • 1 onion (cut into small pieces)
  • 3 teaspoons ground cinnamon
  • 1 lemon
  • 10 mint leaves (finely chopped)
  • 30 grams raisins
  • 9 frozen philo sheets
  • 60 grams melted butter
  • 90 grams almonds (coarsely chopped)
  • 250 grams feta cheese


  1. Peel the carrots and slice them very thinly.
  2. In a medium pan, heat the olive oil and cook the onion over low heat for about 15 minutes. Add the carrots, cinnamon, lemon zest and lemon juice.
  3. Mix, add 500 ml of water and season with salt.
  4. Cover and cook until the liquid as evaporated and carrots are tender, about 25 minutes.
  5. Remove from heat and add mint and raisins.
  6. Preheat oven to 180 degrees Celsius.
  7. Brush philo sheets with melted butter.
  8. Arrange 3 sheets in a square baking dish.
  9. Top with half of the carrots, sprinkle with crumbled feta and half of the almonds.
  10. Repeat the layers 1 more time, and finish with 3 buttered philo sheets.
  11. Bake for about 30-35 minutes until golden brown.

When I peeled the outer skin off my carrots, I just continued to use my veggie peeler to continue getting thin shavings. Then I sliced them in half to keep them near bite sized. I thought that worked well.
