These meatballs are fun and easy made in a muffin tin. Kids can make these as part of a family dinner. Makes a great snack, a lunch, or a family dinner when served with a green vegetable, hot rice, a fruit salad and dinner rolls.


  • 1 pound ground pork
  • 1/4 cup onion (chopped)
  • 1 egg
  • 1/2 cup instant oatmeal
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 2 teaspoons mustard
  • 1/2 cup milk
  • 4 tablespoons ketchup


  1. Heat oven to 350 degrees F. Put pork in a large bowl, add all other ingredients except ketchup. With clean hands, mix together all ingredients thoroughly—this will take a few minutes to make sure everything is well blended. Spoon equal portions into 8 muffin cups. Top each muffin with a teaspoon or so of ketchup. Bake for 25 minutes until internal temperature on a thermometer reads 160 degrees F. Serve warm with more catsup, if desired.
