Forget the grease with these scones. Tomatoes and cheddar cheese are mixed into dough and baked. Cut open and fill with tomatoes and lettuce for an excellent vegetarian sandwich.

Ingredients

  • 450 grams flour
  • 1 teaspoon baking powder
  • 1 pinch salt
  • 110 grams butter
  • 8 sundried tomatoes
  • 50 grams cheddar cheese (grated)
  • 1 egg
  • 200 milliliters milk

Directions

  1. Preheat oven to 200 degrees Celsius.
  2. In a medium bowl, combine flour, baking powder and salt.
  3. Add the butter cut in small pieces, gradually incorporating until crumbly.
  4. Add the sundried tomatoes cut into small pieces and the grated cheese.
  5. Gradually add the egg and the milk and mix until smooth.
  6. Roll out the dough on a floured surface to 1.5 cm thick and cut out the scones with a cookie cutter.
  7. Brush the tops with some milk and bake for 10-12 minutes.
  8. Enjoy warm.

I have had thousands of scones in my life and this recipe is a true winner. I will make it every opportunity I get. The sundried tomato and cheddar combination was divine.
