Ingredients

  • 200 grams flour
  • 100 grams parmesan cheese
  • 100 grams pistachios (coarsely ground, or substitute 100 gr. sweet pancetta bacon in cubes)
  • 80 grams butter (cut into pieces)
  • 1 egg
  • salt (as needed)

Directions

  1. Preheat the oven to 180C.
  2. Place all the ingredients in the food processor and pulse until all the ingredients have been mixed into a coarse crumb-like mixture.
  3. Turn off the food processor and place the mixture into a baking sheet.
  4. Bake for approximately 20 minutes until golden around the edges.
  5. Cool completely and break it up with your hands into bite-sized irregular pieces and serve in a basket. The mixture can also be baked in cupcake molds into round shapes.

In this recipe, the mashed potatoes are in the meatloaf instead of on the side and this gives the meat a moist texture. You could also marble the potatoes into the meat for a more interesting appearance, The dish is finished with fresh tomatoes, celery and olive oil in the last 15 minutes of cooking, which allows the tomatoes to break and sweeten.
