This Savory Pesto Bread is everyone's favorite Italian green sauce in bread form. The first step is to make a fresh basil pesto featuring plenty of garlic, parmesan, and pinenuts. This freshly made pesto is later added to the bread dough along with manchego cheese for a savory bread loaf that can be eaten plain, as a side to your favorite pasta dish, or as a luxurious sandwich bread. Bake time is 35 to 40 minutes.

Ingredients

  • 1 fresh basil (bundle)
  • 50 grams parmesan
  • 30 grams pine nuts
  • 1 clove garlic
  • 100 grams oil
  • 4 teaspoons baking powder
  • 180 grams flour
  • 3 medium eggs
  • 100 grams manchego cheese (grated, or Parmesan)
  • 1/2 teaspoon salt

Directions

  1. Preheat the oven to 200 degrees Celsius.
  2. Mix the basil, parmesan, pine nuts, and garlic together in a food processor or blender and puree. Add the olive oil. Set aside.
  3. Sift the baking powder and flour together.
  4. Add the eggs to the pesto, mix well, and add the flour mixture. Beat until homogenous.
  5. Stir in the grated cheese and mix well.
  6. Pour the batter into a baking pan lined with parchment paper. Spread evenly into the pan with a spatula. Bake for 35 to 40 minutes.
  7. Remove from oven, remove from pan, and cool on a rack before serving.

I absolutely love this pesto bread recipe. It was quick and easy to make and it did not require a lot of ingredients to make it. I love the taste of the bread and how well-seasoned it was. I cannot wait to make this exquisite 4 star recipe again in the future.
