Description
Traditionally, baci di dama — a.k.a. "lady's kisses" cookies — are a hazelnut sandwich cookie filled with chocolate. Following suit, this twist on the original is made with nut flour, though it's savory rather than sweet. The almond flour dough contains Parmesan cheese and Vin Santo, a sweet dessert wine, while the filling is made from a mixture of pesto and cream cheese. Store them in an airtight container in the refrigerator for up to three days and serve them cold or at room temperature.
Ingredients
- 180 grams bread flour
- 7 grams baking powder
- 30 grams Parmesan cheese (grated)
- 1 tsp. salt
- 150 mL milk
- 1 egg
- 50 grams butter (melted)
- 100 grams pesto
- 40 grams wafers (cheese, chopped)
- poppy seeds
Directions
- Preheat the oven to 180 degrees Celsius.
- In a bowl, mix together the flour, baking powder, Parmesan cheese, and salt.
- In a separate bowl, gently beat the eggs with the milk, butter, and pesto.
- Combine the two mixtures and mix well, adding the chopped wafers.
- Fill small baba molds 3/4 full, sprinkle with poppy seeds, and bake for 20 to 25 minutes or until golden brown.
