Following suit, this twist on the original is made with nut flour, though it's savory rather than sweet. The almond flour dough contains Parmesan cheese and Vin Santo, a sweet dessert wine, while the filling is made from a mixture of pesto and cream cheese. Store them in an airtight container in the refrigerator for up to three days and serve them cold or at room temperature.

  • 180 grams bread flour
  • 7 grams baking powder
  • 30 grams parmesan cheese (grated)
  • 1 teaspoon salt
  • 150 milliliters milk
  • 1 egg
  • 50 grams butter (melted)
  • 100 grams pesto
  • 40 grams wafers (cheese, chopped)
  • poppy seeds

Directions

  1. Preheat the oven to 180 degrees Celsius.
  2. In a bowl, mix together the flour, baking powder, Parmesan cheese, and salt.
  3. In a separate bowl, gently beat the eggs with the milk, butter, and pesto.
  4. Combine the two mixtures and mix well, adding the chopped wafers.
  5. Fill small baba molds 3/4 full, sprinkle with poppy seeds, and bake for 20 to 25 minutes or until golden brown.

For my babas, I choose crushed parmesan wafers/crackers to compliment the grated parmesan and the pesto. I substituted the poppy seed with a smaller amount of celery seed, for greater flavor, and folded ¼ cup finely diced sautéed onion into the batter. The babas were heady, savory and ready for company!
