Description

Who says muffins have to always be sweet? These hand-helds, which incorporate pesto, garlicky mortadella and nutty Parmesan make a great case for the savory side of things, suspending the ingredients in an easy batter made from flour, eggs, baking powder, milk and oil. They're enjoyable at breakfast time alongside eggs, though they make a hearty addition to brunch or a serve as a great snack any time of day.

Ingredients

  • 200 grams flour
  • 3 eggs (lightly beaten)
  • 8 grams baking powder
  • 50 milliliters milk
  • 80 grams extra-virgin olive oil
  • 50 grams parmesan cheese (chese, grated)
  • 150 grams pesto
  • 50 grams mortadella (chopped)
  • sliced almonds

Directions

  1. Preheat the oven to 180 degrees Celsius.
  2. Mix together the flour, eggs, baking powder, milk, oil, and cheese until smooth and creamy.
  3. Add the mortadella and almonds and mix well.
  4. Pour the mixture into muffin cups and fill to 2/3 full.
  5. Bake for 25 minutes.
  6. Allow to cool on a cooling rack.
