Description

Who says muffins have to always be sweet? These hand-helds, which incorporate pesto, garlicky mortadella and nutty Parmesan make a great case for the savory side of things, suspending the ingredients in an easy batter made from flour, eggs, baking powder, milk and oil. They're enjoyable at breakfast time alongside eggs, though they make a hearty addition to brunch or a serve as a great snack any time of day.

Ingredients

200 grams flour
3 eggs (lightly beaten)
8 grams baking powder
50 milliliters milk
80 grams extra-virgin olive oil
50 grams parmesan cheese (chese, grated)
150 grams pesto
50 grams mortadella (chopped)
sliced almonds

Directions

1Preheat the oven to 180 degrees Celsius.
2Mix together the flour, eggs, baking powder, milk, oil, and cheese until smooth and creamy.
3Add the mortadella and almonds and mix well.
4Pour the mixture into muffin cups and fill to 2/3 full.
5Bake for 25 minutes.
6Allow to cool on a cooling rack.
