Description

Saffron, fresh dill, extra-virgin olive oil, and black pepper lend these madeleines unexpected savory flavors. Despite their French heritage, they are extremely simple to make, and the molds give them their distintive shell shape. The tender cookies are wonderful cocktail nibbles on their own, or you could serve them as delicious bases for all manner of toppings. One to try: thin slices of smoked salmon, a dollop of sour cream, and a sprig of fresh dill.

Ingredients

  • 130 grams flour
  • 1 teaspoon baking powder
  • 2 eggs
  • 80 grams parmesan cheese (grated)
  • 130 grams butter (melted)
  • 1 gram saffron (stems, diluted for 30 minutes in 30 ml warm milk)
  • 40 grams extra-virgin olive oil
  • 1 teaspoon dill
  • salt
  • ground black pepper

Directions

  1. Preheat the oven to 180 degrees Celsius.
  2. Sieve the flour with the baking powder.
  3. In a bowl, beat the eggs with the cheese.
  4. Add the flour mixture, butter, saffron milk, oil, dill, salt, and black pepper. Mix until smooth.
  5. Place a teaspoonful of mixture into each madeleine mold.
  6. Bake for 15 to 20 minutes until slightly golden.
