With a rich ham and cheese flavors this is a wonderful breakfast idea. The muffins will bake quickly, which makes this a meal that can be enjoyed right away. It is kid-friendly and can be eaten for lunch as well.

Ingredients

  • 140 grams flour
  • 10 grams baking powder
  • baking soda
  • salt
  • 75 grams black forest ham
  • 75 grams cheese (grated)
  • 1 egg
  • 125 milliliters plain yogurt
  • 3 tablespoons sunflower oil

Directions

  1. Preheat the oven to 200 degrees Celsius.
  2. In a large bowl mix together the flour, baking powder, and a pinch of baking soda and salt.
  3. Add the diced ham and grated cheese. Toss together with the flour mixture.
  4. Separately, in a bowl whisk together the egg, yogurt, and oil. Set aside.
  5. Add the liquids to the solids and combine until all the flour has been absorbed.
  6. Fill muffin tins to the top. Bake for 20 minutes.

I love to make these for breakfast. My family enjoys the rich ham and cheese flavors, but they also like having something different than traditional cereal. Be sure to watch the bake temperature on these. They seem to cook really fast and they will burn easily. I turned the oven down to 300 degrees the last time I made them and it seemed to help some.
