Savory Grilled Vegetable Loaf

1 onions (small, finely diced)
50 milliliters olive oil
3 eggs
250 milliliters buttermilk
350 grams flour
120 grams fire roasted peppers (chopped)
125 grams fire roasted eggplant (chopped)
1/2 teaspoon yeast
herbes de provence


1Preheat oven to 180°C (approximately 350°F).
2Heat oil in a saucepan and cook onion over low heat.
3In a mixing bowl, beat eggs.
4Add salt, buttermilk, oil, flour, and baking powder and mix well.
5Add the eggplant, pepper and poached onion to batter.
6Sprinkle with herbs de Provence.
7Pour batter into greased pan.
8Bake in preheated oven for about 50 minutes and test loaf for doneness before removing from oven.
9Bake for 10 additional minutes, if needed.
10Loaf is done when toothpick inserted in middle comes out clean.
