Sporting classic Italian flavors, this savory take on Easter cake features a batter that includes potato flakes, rosemary and black pepper — not to mention diced salami and Pecorino cheese. Once it rises, the batter is transferred to dove-shaped baking pans — much like their more traditional, sweet counterparts. The cakes are then brushed with milk, baked until golden and ready to enjoy at a holiday meal.

Ingredients

  • 200 milliliters milk
  • 80 milliliters water
  • 1 1/2 cubes fresh yeast
  • 30 grams sugar
  • 500 grams bread flour
  • 40 grams potato flakes
  • 1 egg (beaten)
  • 30 grams vegetable shortening
  • 2 tablespoons extra-virgin olive oil
  • 12 grams salt
  • 1 tablespoon dried rosemary
  • ground black pepper
  • 150 grams salami (chopped)
  • 100 grams pecorino cheese (diced)

Directions

  1. In a bowl, add 80 grams of milk, water, yeast, and a teaspoon of sugar. Mix well.
  2. Add the flour, potato flakes, egg, shortening, oil, salt, rosemary, and a pinch of black pepper, Mix well.
  3. Add the salami and cheese and mix well. Leave to rise for two hours in a covered bowl.
  4. Place the dough into 2 dove-shaped pans or molds. Allow the doughs to rise until doubled in size.
  5. Preheat the oven to 190 degrees Celsius.
  6. Sprinkle the tops of the doughs with milk. Bake for 30 to 40 minutes or until golden brown.

I didn’t have dove-shaped pans so I used two round cake pans. The dough domed up nicely and we cut it in tall wedges served with scrambled eggs, coffee and juices. We enjoyed the combination of salami and pecorino in this chewy, bread-like cake.
