This is a hearty cookie-like biscuit that is packed with hearty ingredients. You have to be curious how wonderful these treats can be when they combine salty walnuts with savory chorizo sausage. Ingredients

  • 60 grams walnut (kernels)
  • 200 grams flour
  • 1/2 teaspoon yeast
  • salt
  • ground black pepper
  • 60 grams chorizo (diced)
  • 100 grams butter (soft)
  • 1 medium egg

Directions

  1. In a skillet, brown the chopped nuts for 3 to 4 minutes. Watch carefully. Let cool.
  2. Mix flour, yeast, salt, pepper, nuts, and chorizo.
  3. In a bowl, mix the butter and the beaten egg. Add to the flour mixture.
  4. Make a ball of dough using your fingers.
  5. Form 18 small balls of dough about the size of a walnut.
  6. Arrange them on a baking sheet lined with parchment paper, and press lightly with the palm of your hand.
  7. Put in the freezer for 30 minutes.
  8. Preheat oven to 180 degrees Celsius.
  9. Bake for about 20 minutes.
  10. Set them aside for 5 minutes before cooling on a tray.

Such a savory and astonishingly easy recipe this was to make. I will be making them again tomorrow and love the massive amount of walnuts in each cookie. Semi-hard with a soft interior that explodes when you bite into them.
