Strudel need not be reserved for special occasions. When made with frozen puff pastry dough, it can be on the table in under an hour, and you can improvise on the fillings. Here, the pastry dough is simply layered with an egg that's lightly beaten and mixed with two types of cheese (montasio and parmesan) and then pancetta slices. Serve, cut into slices, as an appetizer or as part of a light dinner, with a green salad alongside.

Ingredients

  • 1 roll (ready-made puff pastry)
  • pancetta
  • 1 egg
  • montasio (or Romano cheese, grated)
  • parmesan cheese (grated)
  • milk

Directions

  1. Preheat the oven to 190 degrees Celsius
  2. Lay the pastry out flat on a lightly floured surface.
  3. In a bowl, beat the egg with the cheese and spread atop the pastry.
  4. Cover with slices of pancetta.
  5. Fold the pastry over to form a strudel and place on a lined baking tray.
  6. Brush with milk and bake for 23 to 25 minutes or until golden brown.

These strudels were a big hit. The bacon could be replaced with ham or you could just leave it out and keep the cheese inside for a meat free breakfast. The crust is light and flaky. Make sure the pan you bake them on is well buttered, and flip them through the cooking time for even crispness on both sides.
