Description

These mini carrot cakes are savory, not sweet, and seasoned with cumin and black pepper--and each one is stuffed with a cube of gouda cheese, which melts in the oven for a wonderful surprise upon eating. The batter is made moist with yogurt (and three whole eggs) and baked in muffin tins, for individual-sized servings. These are best served while still warm, when the aromatic spices will be more flavorful.

Ingredients

  • 3 eggs
  • 6 ounces plain yogurt
  • 2 carrots
  • 1 tablespoon ground cumin
  • salt
  • ground black pepper
  • 15 grams baking powder
  • 120 grams flour
  • 120 grams cheese

Directions

  1. 1Preheat the oven to 180 degrees Celsius.
  2. 2In a bowl, add the eggs and yogurt and mix well.
  3. 3Add the carrot, cumin, and a pinch of salt and black pepper. Mix well.
  4. 4Sift the flour and baking powder together. Add to the wet mixture and mix well.
  5. 5Pour a small amount of batter into cupcake pan. Add a cube of gouda cheese to each cupcake and then cover with more batter until each one is three-fourths full.
  6. 6Bake for 25 minutes. Serve warm.
