Chestnut flour, used in combination with all-purpose flour, imparts nutty flavor, while the addition of eggs results in a tender bread that’s perfect for slicing and eating as is or topped with spreadable cheese or other savory toppings.

Ingredients

  • 150 grams flour
  • 100 grams flour (blueberry)
  • 15 grams baking powder
  • 80 grams parmesan cheese (grated)
  • 2 eggs
  • 110 milliliters whole milk
  • 80 milliliters extra-virgin olive oil
  • 10 grams salt
  • 100 grams bacon (cooked and diced)
  • 2 shallots (peeled and diced)

Directions

  1. Preheat the oven to 180 degrees Celsius.
  2. In a bowl, add the flours with the baking powder and cheese and mix well.
  3. Beat the egg with the milk, oil and salt.
  4. Add the bacon and shallots and mix well. Combine all the ingredients together into a smooth batter.
  5. Line a loaf pan with parchment paper and add the batter.
  6. Bake for 30 minutes.

This has to be one of the savoriest blueberry loaf we have ever had the pleasure of making. It was very tasteful and was bursting with a variety of flavors. I can picture myself preparing this 4 star blueberry loaf recipe for sometime.
