Ingredients

  • 180 grams strong flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon sugar
  • 1 teaspoon salt
  • 40 grams parmesan cheese (grated)
  • 150 milliliters milk
  • 1 egg
  • 50 grams melted butter
  • 3 tablespoons cherry tomato (paté)
  • 3 tablespoons olives (coarsely chopped, Taggiasca variety, or small black olives)
  • sesame seeds

Directions

  1. Preheat the oven to 180C.
  2. In a bowl, combine the flour, baking powder, parmesan cheese, sugar and salt.
  3. In another bowl, combine the egg with the milk and butter and beat lightly.
  4. Add the two mixtures together, then add the cherry tomato patè and the chopped olives and combine quickly.
  5. Fill the small babà molds to 3/4, sprinkle with the sesame seeds, and bake for approximately 20 to 25 minutes or until golden.
  6. Serve warm

These made a yummy appetizer to an Asian inspired dinner. I served soy sauce with them on the side for dipping. You could use a cupcake pan if you don't have a baba' mold. Spray whatever you are using for baking with coconut oil or another kind of nonstick cooking spray, even though most baba' molds are coated with a nonstick coating on the inside.
