Great! A nice quick and healthy side dish

Delicious- was quite surprised with the yummy flavour, I had it on the side with chicken tenders
Fabulous, I chunked my courgettes, yellow squash, red and white onions, red and yellow peppers and halved baby jerseys in a large roasting pan then tenderly caressed them in olive oil that had bruised garlic cloves in it. I threw in lots of dried basil and chopped fresh rosemary. I could hear them squealing with delight! I then placed these, and my tray of prepared chicken portions, in a medium oven of 200 degrees. I then followed your method to the end. Sublimely scrumptious. 😁🙋🏼👍🏻
Need to double the portions but my boyfriend just loved it with marinated tofu and a bit of Tabasco ! Lovely !

Fantastic! Added more tomatoes than the recipe called for and let them cook for around 10-15 minutes in the onion and oil in a large cast iron skillet. I also cut a mix of zucchini and yellow squash with a spiral cutter. I would say a good ratio is 1 pint of tomatoes to every one zucchini and squash. I made 3 servings in all. I also added the white balsamic while everything was still cooking and coming together. I didn’t add it as a dressing. 3 pints of tomatoes, 3 squash, 3 zucchini, onion and garlic to taste, and a good amount of basil.

Great side dish. Didn’t have basil but used parsley and it seems to work. Added a teaspoon of Thai chili paste for extra kick and flavor.
the tomatos were a bit too soft, but other than that it was really nice

Sooo good. Nice and light. In my opinion, tastes slightly better when it has cooled off a little.

this was amazing!! even my granddaughters loved it!
Great side dish or even a light meal for me. I love zucchini and this recipe really showcases it wonderfully. The tomatoes are a good pop of sweetness and acidity.
It was very light and refreshing. Served it with thin spaghetti and nutritional yeast on top. The whole family enjoyed this recipe.

Turned out pretty well
I used the oil from the meat I was cooking, and had no leftover's. it just needed a little salt.

It’s pretty good. It could use a little more flavour but I can’t put my finger on what other herb or spice would perk it up a bit.

It turned even better than I expected! I used fresh mint leaves and dill instead of basil and some red pepper flakes for seasoning. Definitely recommended!
