Very good! Didn’t have fresh basil, so I used 1 tablespoon Italian seasoning instead. Also used a Vidalia onion instead of a red one.. I have made this dish twice, and I foresee making it again and again!

Fabulous, I chunked my courgettes, yellow squash, red and white onions, red and yellow peppers and halved baby jerseys in a large roasting pan then tenderly caressed them in olive oil that had bruised garlic cloves in it. I threw in lots of dried basil and chopped fresh rosemary. I could hear them squealing with delight! I then placed these, and my tray of prepared chicken portions, in a medium oven of 200 degrees. I then followed your method to the end. Sublimely scrumptious. 😁🙋🏼👍🏻

Fantastic! Added more tomatoes than the recipe called for and let them cook for around 10-15 minutes in the onion and oil in a large cast iron skillet. I also cut a mix of zucchini and yellow squash with a spiral cutter. I would say a good ratio is 1 pint of tomatoes to every one zucchini and squash. I made 3 servings in all. I also added the white balsamic while everything was still cooking and coming together. I didn’t add it as a dressing. 3 pints of tomatoes, 3 squash, 3 zucchini, onion and garlic to taste, and a good amount of basil.

Great side dish. Didn’t have basil but used parsley and it seems to work. Added a teaspoon of Thai chili paste for extra kick and flavor.
