This nutrient packed gluten free vegetarian dish will satisfy all of your hunger and flavor cravings. Spinach is sauteed with mushrooms in a balsamic vinegar sauce and topped with a hardboiled egg for additional protein.

Ingredients

  • 200 grams frozen spinach
  • 2 eggs
  • 1 package mushrooms (frozen)
  • 10 olives
  • 3 garlic cloves
  • 1 teaspoon mustard seeds
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar

Directions

  1. In a pot, add water, a little salt, and 2 washed eggs. Bring to a boil on medium heat. After 5 minutes, add the spinach and boil 5 to 6 minutes. Remove the eggs, peel and chop. Set aside. Drain the spinach well. Set aside.
  2. In a frying pan, add the olive oil, garlic cloves, and sliced mushrooms. Cook until the mushrooms are golden.
  3. Add the mustard seeds, olives, and balsamic vinegar. Mix.
  4. Finally, add the spinach, and cook for 2 or 3 minutes.
  5. Serve immediately.
  6. Garnish each plate with pieces of chopped egg.

Nice dish if you want to stay away from meat. It has a lot of flavor, and the sauteing of the veggies really helps bring that out. I also love that it is packed full of nutrients. The eggs (I used more than just two) make it feel like more than just an average vegetarian dish. A great dinner recipe when you are craving something without meat.
