Sauteed Spinach with Mushrooms and Eggs

Description

This nutrient packed gluten free vegetarian dish will satisfy all of your hunger and flavor cravings. Spinach is sauteed with mushrooms in a balsamic vinegar sauce and topped with a hardboiled egg for additional protein.

Ingredients

200 grams frozen spinach
2 eggs
1 package mushrooms (frozen)
10 olives
3 garlic cloves
1 teaspoon mustard seeds
2 tablespoons olive oil
2 tablespoons balsamic vinegar

Directions

1In a pot, add water, a little salt, and 2 washed eggs. Bring to a boil on medium heat. After 5 minutes, add the spinach and boil 5 to 6 minutes. Remove the eggs, peel and chop. Set aside. Drain the spinach well. Set aside.
2In a frying pan, add the olive oil, garlic cloves, and sliced mushrooms. Cook until the mushrooms are golden.
3Add the mustard seeds, olives, and balsamic vinegar. Mix.
4Finally, add the spinach, and cook for 2 or 3 minutes.
5Serve immediately.
6Garnish each plate with pieces of chopped egg.
