Ingredients

  • 1 tablespoon oil
  • 1/3 pound turkey breast (cut into strips)
  • 1 red onion (small, peeled and cut into rings)
  • 1/3 pound zucchini (halved lengthwise and sliced)
  • 4 ounces white button mushrooms (quartered)
  • 1/4 cup vegetable stock
  • 2 ounces cherry tomatoes (halved)
  • 1 tablespoon reduced-fat sour cream
  • 5 sprigs flat leaf parsley (chopped)

Directions

  1. Heat the oil in a frying pan and cook the turkey 3 mins. Add the onion, zucchini and mushrooms and sauté 4 mins. Pour in the stock, stir in the tomatoes and simmer 4 mins. Season with salt and black pepper. Transfer to a serving bowl, spoon on the sour cream and sprinkle with the parsley.
