Description

Drawing inspiration from Vietnamese cuisine, this recipe for Sauteed Fava Beans makes a great addition to the dinner table. Flavored with plenty of ginger and garlic, the fava beans are sauteed along with peas, green peppers, and green olives to flavorful perfection. Full of green power, roasted peanuts, fresh coriander, and a drizzle of rice vinegar are the final touches to this tasty dish. Serve with fluffy white or brown rice for a vegetarian lunch or dinner.

Ingredients

  • 600 grams fava beans (frozen)
  • 200 grams frozen peas
  • 2 garlic cloves
  • 1/2 teaspoon ginger
  • 2 teaspoons green pepper (chopped)
  • 3 teaspoons fresh coriander (chopped)
  • salt (to taste)
  • olive oil
  • rice vinegar
  • 1 cup pitted green olives
  • 4 teaspoons toasted peanuts

Directions

  1. 1Boil the fava beans and peas in salted water and set aside.
  2. 2In an already hot wok, add the oil, garlic, ginger and saute until golden.
  3. 3Add the peppers and saute for another 2 minutes.
  4. 4Add the olives and saute about 3 minutes, stirring constantly.
  5. 5Add the fava beans and peas, and cook for another 5 minutes. If the mixture is too dry, add a little olive oil, but not too much so it doesn't get sticky.
  6. 6A minute before removing from heat, add the coriander and roasted peanuts.
  7. 7Remove from heat, and serve with another drizzle of olive oil and 1 tablespoon of rice vinegar.
