This quick low-calorie pan cooked meal is made with five simple ingredients. Featuring a medley of julienned vegetables, your favorite sausage, and your choice of beans, this pan cooked meal is full of protein, fiber, and lots of flavor. Easily made in just one pan, cleanup will be minimal.

Ingredients

  • 1/2 package vegetables (julienned)
  • olive oil (as needed)
  • 3 garlic cloves
  • 1 smoked sausage (farinheira)
  • 1 cup green beans

Directions

  1. Begin by blanching the vegetables in boiling water for 5 minutes. Remove from heat, and drain.
  2. In the same pan, heat 1 or 2 tablespoons of olive oil, add chopped garlic, and saute slightly.
  3. Remove sausage from skin, and undo sausage meat with a fork.
  4. Add to pan.
  5. Add the drained vegetables, stir, and cook for a few minutes.
  6. Finally, add the beans, gently mix, and simmer until beans are warm.
  7. Do not stir too much so that the beans don't crumble.
  8. Serve warm.

I like to serve these little fish in personal sized baskets along with a handful of fries. My son says that gives him the feel of a beachside fish shack! I also serve these with onion rings and homemade ketchup! But my favorite is to fry them up, let them cool a few moments, then pop one into my mouth!
