Description

This quick low-calorie pan cooked meal is made with five simple ingredients. Featuring a medley of julienned vegetables, your favorite sausage, and your choice of beans, this pan cooked meal is full of protein, fiber, and lots of flavor. Easily made in just one pan, cleanup will be minimal.

Ingredients

  • 1/2 package vegetables (julienned)
  • olive oil (as needed)
  • 3 garlic cloves
  • 1 smoked sausage (farinheira)
  • 1 cup green beans

Directions

  1. 1Begin by blanching the vegetables in boiling water for 5 minutes. Remove from heat, and drain.
  2. 2In the same pan, heat 1 or 2 tablespoons of olive oil, add chopped garlic, and saute slightly.
  3. 3Remove sausage from skin, and undo sausage meat with a fork.
  4. 4Add to pan.
  5. 5Add the drained vegetables, stir, and cook for a few minutes.
  6. 6Finally, add the beans, gently mix, and simmer until beans are warm.
  7. 7Do not stir too much so that the beans don't crumble.
  8. 8Serve warm.
