The light crunch of a perfectly crisp and flaky pastry and the heartiness of dinner on the inside, this savory pastry can be served as an accompaniment to your dinner or perhaps as dinner itself. Ready in an hour. You can make your own puff pastry or buy it premade.

Ingredients

  • 1 farinheira (Portuguese pork sausage with flour, or similar)
  • 1/2 package frozen spinach
  • 1 puff pastry (rectangular fresh)
  • 100 grams mozzarella cheese (grated)
  • 1 egg (beaten)

Directions

  1. Fill a saucepan with water, and bring to a boil.
  2. Add the sausage, and cook for 4 to 5 minutes after the water boils.
  3. Once cooked, remove the sausage, set aside, but keep the water on the stove. Add the spinach and a pinch of salt.
  4. Cook for 5 minutes.
  5. Remove, drain, and set aside.
  6. Peel the sausage, and break it into pieces with a fork.
  7. Allow the sausage and the spinach to cool completely.
  8. Preheat oven to 180 degrees Celsius.
  9. Roll out the puff pastry.
  10. Spread the sausage stuffing on the pastry lengthwise.
  11. On top, place the well drained spinach.
  12. Finally, cover with mozzarella cheese.
  13. Close the dough, pasting the ends together with a little warm water.
  14. Brush the top of the pastry with the beaten egg, and bake for about 25 minutes, or until the dough is golden brown.

These little puff pockets are a bit time consuming to make, but well worth it. For as long as it takes to make, they are relatively easy to make with these instructions. They taste fantastic as well. The flaky crust gives way to warm, gooey filling. The sausage, spinach, and cheese make for a great combination of flavors.
