AMAZING. We made it with vegetarian Italian sausage and vegan cream cheese instead of heavy cream. Also, I was out of basil and bay leaves so I used thyme and parsley instead. This was seriously one of my most favorite recipes yet.

I made this soup exactly as the recipe said and it was delicious! Even the picky eaters who frown at anything green had seconds. It was quick to put together and tasted like you fussed all day.

This made a great dinner for two, with plenty of leftovers. Make sure you double-check how much spinach or kale you'll need (in ounces) to make 3 cups. We went with hot Italian sausage and left out the crushed red pepper. Otherwise, just follow the directions and enjoy! So easy to prepare, this will be a go-to staple for our winters in Washington, DC.

Olive Garden Zuppa Toscana can step aside. Yum! And so easy!! Substitute kale if desired. Remember always use organic greens ;) I've made this recipe a few times now. A house comfort favorite.

Yummy! Reminds me of the Zuppa Tuscana at Olive Garden only better because I'm not a fan of kale and this one has spinach instead. Great leftover too!

I've been making this recipe for several months now and it's always a hit! Spicy and hearty and on the table in less than 30 minutes. We use kale instead of spinach but only because that's what we have around the house. Definitely my favorite winter soup.
