- 3/4 lb. sweet Italian sausage (about 4 links, casings removed, I substituted Brats)
- 1 russet potato (large, peeled and cut into large dice, about 2 cups)
- 1 red onion (medium, cut into large dice)
- 1 fennel bulb
- 2 Tbsp. fennel fronds
- 3 Tbsp. dry sherry
- 4 cups chicken broth (lower-salt)
- 1/4 cup fresh flat leaf parsley (chopped, I used about 1/8 cup)
- 1/4 cup oil (chopped, packed sun-dried tomatoes, drained, I substituted bell pepper and added them with the onion)
- 2 Tbsp. heavy cream (I used fat-free half & half)
- 1 tsp. grated lemon zest (finely)
- kosher salt
- freshly ground black pepper
