Sausage and Tomato Pilaf

Ingredients

  • 1 tablespoon olive oil
  • 3 beef sausages (thick)
  • 1 onion (chopped)
  • 1 red pepper (seeded, sliced)
  • 2 cloves garlic (crushed)
  • 14 ounces arborio rice
  • 1/4 teaspoon cayenne pepper
  • 4 cups chicken stock
  • 14 ounces diced tomatoes
  • 14 ounces chick peas (rinsed, drained)
  • 5 ounces frozen peas
  • 1/2 ounce chopped parsley
  • salad
  • crusty bread

Directions

  1. Heat oil in a frying pan on high. Cook sausages 4-5 mins, until cooked through. Remove from pan and slice. Sauté onion and pepper in same pan 2-3 mins. Stir in rice and cayenne pepper. Return sausage to pan along with half of stock. Bring to a boil. Reduce heat and simmer 3-4 mins, until liquid has been absorbed. Add tomatoes and remaining stock. Cook, uncovered, 10 mins, until liquid is absorbed and rice is tender. Add chickpeas and peas. Heat, stirring, 2 mins. Sprinkle with parsley and serve with salad and crusty bread.
