Sausage and Fries with Curry Ketchup



  • 2 tablespoons sunflower oil
  • 1 onion (finely diced)
  • 2 tablespoons tomato purée
  • 4 tablespoons brown sugar
  • 2 tablespoons curry powder
  • 400 grams chopped tomatoes
  • 4 tablespoons white wine vinegar
  • 1.5 liters vegetable oil (for frying)
  • 1 kilogram potatoes (peeled and cut into chips)

    1. To make the ketchup, heat 1 tbsp oil in a saucepan, add the onion and sauté for 3-4 mins. Stir in the tomato purée, sugar and 1-2 tbsp curry powder. Mix in the chopped tomatoes and vinegar and season. Simmer for 10-15 mins.
    2. Heat the vegetable oil to 300°F in a large saucepan. Fry the potatoes for 3 mins in batches. Then remove and spread on a baking sheet. Heat 1 tbsp oil in a frying pan, add the sausages and fry for 10-15 mins until cooked through. Meanwhile, Increase the temperature of the frying oil to 325°F and fry the potatoes one more time for 4-5 mins, in batches. Season with salt. Divide the fries and sausages between 4 plates and serve with the ketchup.
