I added carrots and celery to the onion and seasoned the veggies with taco seasoning, since the recipe lacks any seasoning aside from bay leaves. One important step is skipped in the recipe, and that is to bring your soup to a boil before simmering. I let it dinner for 20 minutes and my potatoes were still raw. Brought it up to a boil and they softened much more quickly when simmering afterwards. Overall it was a thick, creamy soup that I'll make again.
