- 3 tablespoons onion (chopped fine)
- 4 tablespoons celery (chopped fine, okay to use the inner stalks with the leaves)
- 3/4 cup long grain white rice
- 1 can cream of chicken soup (low fat or healthier version works fine)
- 1 cup chicken broth (just water with a dissolved chicken boullion cube will work)

Not bad, modified it a bit to use pre-cooked rice by only adding a half can of water and an 1/8th teaspoon of chicken bouillon instead of the chicken broth recommended. I also cooked for 20 min covered and 15 uncovered. The hubs went up for seconds and we had nothing leftover, I'd probably make this again.
