These savory sausage muffins can be made full size or in a mini version to increase transportability. The perfect addition to any spring picnic or brunch, these muffins feature your favorite smoked sausage.

Ingredients

  • 100 grams smoked sausages (peeled and sliced)
  • 240 grams flour
  • 120 grams margarine
  • 150 grams milk
  • 2 eggs
  • 2 tablespoons baking powder

Directions

  1. Preheat oven to 200 degrees Celsius.
  2. Place the cupcake molds lined paper molds in a baking tray.
  3. Set aside.
  4. Mix the flour, margarine, baking powder, milk, and eggs in the food processor.
  5. Add the sausage, and mix. A thick dough will form.
  6. Fill the muffin pans 2/3 full with the dough
  7. Bake until the muffins are tall and golden.
  8. Remove from oven, and let cool.

I love these muffins! It's nice to have a muffin recipe that is savory as opposed to sweet. I added shredded cheese too. Very yummy. I brought these muffins to a work breakfast and they were a big hit. I will definitely keep this recipe handy.
