  • 4 tablespoons olive oil
  • 2 onions (medium, finely diced)
  • 3 cloves garlic (finely chopped)
  • 1 1/2 teaspoons curry powder
  • 1/2 teaspoon sugar
  • 1 1/2 tablespoons tomato paste
  • 850 milliliters chopped tomatoes (tinned)
  • 400 milliliters vegetable stock
  • 8 pork sausages (good quality)
  • 2 red chillies (finely chopped)
  • 1 1/2 teaspoons Italian herbs
  • 50 grams cheese (grated)

Directions

  1. Heat oil in a saucepan and sauté onions and garlic. Add curry powder and sugar and cook for 2- 3 mins then add tomato paste. Add tomatoes and stock, season, bring to a boil then simmer for 12-15 mins, stirring occasionally.
  2. Meanwhile, mix sausage meat with chilies and herbs then transfer to a piping bag. Stuff cannelloni tubes and arrange in a baking dish. Cover with sauce then top with grated cheese and bake for about 40 mins until golden brown.
