Description

Made with juicy pork tenderloin, this recipe for Satay with Peanut Sauce makes a wonderful appetizer when served on a tray along with the peanut sauce for dipping or a tasty dinner entree when served with the peanut sauce over a bed of fluffy white rice. Marinated in a ginger and garlic marinade, the pork is full of flavor and broiled until crisp on the outside. The spicy peanut sauce is made from a base of coconut milk and peanut butter to which is added cayenne pepper, cumin, lime, and soy sauce for a sweet and savory flavor.

Ingredients

1/2 kilogram pork tenderloin
1/2 onions (small)
2 garlic cloves
1 piece fresh ginger (optional)
2 tablespoons lime juice
1 tablespoon soy sauce
1 teaspoon coriander seeds
1 teaspoon cumin
1/2 teaspoon turmeric
2 tablespoons olive oil
1/2 teaspoon cumin
1/2 teaspoon coriander seeds
200 milliliters coconut milk
4 tablespoons peanut butter
1 tablespoon lime juice
1 tablespoon soy sauce
1 teaspoon sugar (optional)
2 cayenne pepper

Directions

1Cut the pork into skewer-size pieces.
2In the food processor, puree the onion, garlic, ginger, lime juice, soy sauce, coriander seeds, cumin, turmeric, and olive oil until smooth. The result should be a yellow paste.
3Place the pork and marinade in a resealable plastic bag. Close and shake to cover the pork with the marinade.
4Refrigerate overnight.
5Grind the cumin, coriander seeds, and cayenne peppers in a coffee grinder.
6In a saucepan, add the cumin, coriander seeds, cayenne peppers, coconut milk, peanut butter, lime juice, soy sauce, and sugar. Cook on low heat until smooth. Do not let it boil.
7Turn on the broiler on high.
8Insert the pork into the skewers. Broil for 10 minutes on each side, or until the edges of the pork are golden brown.
9Serve immediately, accompanied with the peanut sauce.
