  • 1 1/3 pounds boneless chicken thighs (trimmed, cut into strips)
  • 1 lime
  • 2/3 cup cilantro (chopped plus more leaves, to serve)
  • 2 tablespoons vegetable oil
  • 2 onions (sliced)
  • 8 ounces satay sauce (about 1 cup)
  • 1/4 cup water
  • 1 bunch broccolini (trimmed, separated)
  • steamed rice (to serve)

    Directions

    1. In a large bowl, combine chicken with zest, juice and chopped cilantro.
    2. Heat oil in a wok on high. Stir-fry onion for 2–3 minutes, until tender. Add chicken and stir-fry for 4–5 minutes, until almost cooked through.
    3. Add sauce and water to wok. Bring to a simmer and cook, stirring, for 3–4 minutes.
    4. Toss in broccolini and simmer for 1–2 minutes. Serve with rice, garnished with cilantro leaves.
