Simple zesty sauce made slightly sweet with a touch of marmalade. Serve with roasted seasoned potato wedges and large leafy salad.
- 3 pounds pork loin roast (boneless)
- 1/2 cup chunky salsa
- 1/2 cup orange marmalade
- 1/2 cup barbecue sauce
- 2 tablespoons horseradish (prepared)
- Heat oven to 350 degrees F. Pat pork dry with paper towels, place in shallow roasting pan. In medium bowl, stir together salsa, marmalade, barbecue sauce and horseradish. Roast pork about 1 hour (20 minutes per pound). During final 20 minutes of roasting, baste with sauce, until internal temperature on a thermometer reads 145 degrees F. Remove roast from oven; let rest 10 minutes befoer slicing to serve. While roast rests, remove pan drippings to small saucepan, add remaining basting sauce and simmer over low heat. Serve sauce with pork.
