  • 1 sheet frozen puff pastry (thawed)
  • 1/2 cup cream cheese (spreadable)
  • 1/4 cup sun-dried tomatoes in oil (drained and chopped)
  • 1 tablespoon mustard (mild)
  • 1 teaspoon dried oregano
  • 4 ounces sardines (in oil, drained)
  • 1 tablespoon olive oil
  • 1/4 cup parmesan cheese shavings
  • 1/4 cup arugula leaves

Directions

  1. Preheat the oven to 425°F. Cut puff pastry into 6 squares. Place on a foil-lined baking sheet. Prick each square all over with a fork. Bake for 5-7 mins until beginning to puff up. Mix the cream cheese, chopped sun-dried tomatoes, mustard and oregano in a medium bowl until well blended.
  2. Spread the cream cheese mixture on each square leaving a 1/4-inch border all around. Top with the sardines and drizzle with a little olive oil. Return to the oven and bake for 10 mins. Top with the Parmesan cheese shavings and arugula and serve immediately.
