Cookies are perfect for a party, special occasion, a celebration, or just because you want something sweet. There so many recipes out there, so how do you decide which are worth making? This Sandwich Star Cookies recipe is divine. It takes time to make them, but the rewards are heavenly. The best part is that you can choose the jelly you wish to fill them with, based on your own tastes.

Ingredients

  • 300 grams unsalted butter (softened)
  • 3 1/2 cups flour
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • jelly (for filling, any preferred flavor)
  • confectioners sugar

Directions

  1. Preheat the oven to 180 Celsius.
  2. Beat the butter until smooth. Add the sugar and beat until fluffy. Add the vanilla, mix well. Add the flour and salt and mix together to combine.
  3. Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
  4. Roll out the dough until approximately 1/2 centimeter thick and use a cookie cutter to form into 40 shapes. Use a smaller round cookie cutter to remove the middle from 20 of the cookies.
  5. Place onto a cookie sheet and bake for 15 minutes until lightly golden. Let cool completely.
  6. Spread jelly onto a cookies with the middle still intact and place the a cookie with the middle cut out on top to form a sandwich. Repeat.
  7. Sprinkle with confectioners sugar.

This is a basic sugar cookie recipe that can be cut into any shape and filled with jellies, peanut butter, nutella or whatever else you’d like to try! We like the look of jellies peeking through the cut-out but other fillings are tasty and appealing too.
