Ingredients include muscovado sugar or dark brown sugar, softened unsalted butter, vegetable shortening, egg, vanilla, self rising flour, finely chopped dry salted fruit, and vegetable oil. They are a delectable delight.

Ingredients

  • 1/3 cup muscovado sugar (may substitute dark brown sugar)
  • 100 grams unsalted butter (softened)
  • 1/4 cup vegetable shortening
  • 1 eggs
  • 1 teaspoon vanilla
  • 1 cup self rising flour
  • 1/2 cup fruit (dry salted, finely chopped)
  • 1/2 cup sugar (additional mascobado)
  • vegetable oil (approximately 1/4 cup)

Directions

  1. 1Preheat the oven to 180 Celsius.
  2. 2Beat the sugar, butter, shortening, egg, and vanilla together. Add the flour and the fruit. Mix.
  3. 3Line baking sheets with parchment paper and place balls of dough approximately 1 teaspoon in size, onto the baking sheet.
  4. 4Grease the bottom of a heavy drinking glass with vegetable oil, dip into the extra mascabado sugar, and flatten each cookie.
  5. 5Bake for 10 minutes, until golden around the edges. Remove from the oven and cool on a rack.
