Just when you thought chocolate chip cookies couldn't get better... wait until you try them with a chocolate-covered caramel baked inside.
Ingredients

- 3/4 cup unsalted butter (softened)
- 3/4 cup light brown sugar (packed)
- 1/3 cup granulated sugar
- 1 large egg
- 2 tsp. vanilla extract
- 2 cups all purpose flour
- 1 tsp. baking soda
- 1 tsp. cornstarch
- 1/2 tsp. salt
- 1 cup semisweet chocolate chips
- 20 bite size chocolate covered caramels (about 3/4-inch diameter, such as Rolo, unwrapped)

Directions
- Line two baking sheets with silicone baking mats or parchment paper. Set aside.
- Place the butter, brown sugar, and granulated sugar in a large bowl. Beat with a hand mixer on medium speed until well combined, about 1 minute. Add the egg and vanilla and continue to beat until smooth, about 30 seconds.
- Sift the flour, baking soda, cornstarch, and salt into the butter mixture. Beat on low speed, scraping the sides of the bowl with a rubber spatula as needed, until a smooth dough forms. Fold in the chocolate chips.
