Ingredients

  • 1 avocado
  • 2 teaspoons basil pesto ( prepared)
  • salt
  • pepper
  • 1 buns ( ciabatta, halved and toasted)
  • 4 grape tomatoes (sliced)
  • 84 grams eggs
  • salt
  • pepper
  • 1 tablespoon balsamic reduction
  • fresh basil (torn)

Directions

  1. Mash avocado with basil pesto. Season with salt and pepper to taste (if using).
  2. Spread avocado mixture over toasted ciabatta buns. Top with sliced tomatoes and Salt & Pepper eggs. Drizzle with balsamic glaze and garnish with basil. Serve immediately.
