Ingredients

  • 4 bone-in ribeye (rib) pork chops (3/4-inch thick)
  • salt (to taste)
  • pepper (to taste)
  • 1 teaspoon vegetable oil
  • 1 1/2 cups salsa

Directions

  1. Season chops with salt and pepper. Heat oil in large nonstick skillet over medium-high heat and brown chops on one side, about 2-3 minutes. Turn, add salsa to skillet; bring to a boil, lower heat, cover and simmer for 8 minutes until internal temperature on a thermometer reads 145 degrees Fahrenheit, followed by a 3-minute rest time.
