Description

This is the quickest skillet supper in the West. Brown pork chops; simmer briefly with your favorite salsa. Top with grated Cheddar cheese and chopped fresh cilantro, and serve with corn on the cob and a tossed green salad.

Ingredients

4 bone-in ribeye pork chops (3/4-inch thick)
salt (to taste)
pepper (to taste)
1 teaspoon vegetable oil
1 1/2 cups salsa

Directions

1Season chops with salt and pepper. Heat oil in large nonstick skillet over medium-high heat and brown chops on one side, about 2-3 minutes. Turn, add salsa to skillet; bring to a boil, lower heat, cover and simmer for 8 minutes until internal temperature on a thermometer reads 145 degrees Fahrenheit, followed by a 3-minute rest time.
