Ingredients

  • 5 tomatillos
  • 5 leaves epazote
  • 1/2 chile pepper
  • salt and ground black pepper
  • 80 grams oaxaca cheese
  • tortillas

Directions

  1. Blend the tomatillos in the blender with the epazote and the chile. Season with salt and pepper.
  2. Heat a small skillet and spritz with cooking spray. Pour in the salsa, adding a little water to thin if necessary.
  3. When the salsa begins to boil, add the shredded cheese and stir until it melts.
  4. Serve immediately with warm tortillas.

Cheese melts are a great after school or late night snack. We use only corn tortillas at our house and use them to scoop into the salsa mixture but this recipe also works well when poured over grilled chicken!
