This cold tomato soup is a classic recipe from Cordoba, Spain. The main substance of soup is tomatoes and bread, both of which make for a flavorful and filling soup. Only 6 additional ingredients are needed to turn it into a meal, it only takes 40 minutes to make so you can be digging into it in no time. Ham and eggs are added to the soup once it is plated, which add flavor and makes it a little more filling.

Ingredients

  • 1 kilogram tomatoes
  • 200 grams bread
  • 1/2 garlic clove
  • 160 milliliters extra virgin olive oil
  • water
  • salt
  • ham
  • 1 egg

Directions

  1. Wash, stem and crush the tomatoes.
  2. Strain to remove the skin and seeds.
  3. Add the bread to the tomatoes and soak for 10 minutes.
  4. Add the tomatoes, bread, garlic, and oil to a blender and puree until smooth. Thin with water if the sauce is too thick.
  5. Season with salt. Plate and add the ham and hard-boiled egg.

Very good. I enjoyed preparing and eating this recipe. It is fun to serve this recipe to others as I enjoy saying it's name...very exotic sounding to my Pacific Northwest friends!
